The white sturgeon is a sturgeon species belonging to the Acipenseridae family of the Acipenseriformes order. They're an anadromous fish that may be found in the Eastern Pacific. Sturgeon skin is coated in bone plates called scutes instead of scales, which may be quite sharp on juvenile sturgeon.
